Cooking - Chocolate Cake

Ingredients

  • 2 cups boiling water
  • 1 cup unsweetened cocoa powder
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 2 1/4 cups white sugar
  • 4 eggs
  • 1 1/2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 3 - 9 inch round cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.
  2. In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 3 prepared pans.
  3. Bake in preheated oven for 25 to 30 minutes. Allow to cool.

Chocolate Muffins

Ingredients

2 eggs
1 cup (220 g) sugar
1 cup (110 g) all-purpose flour
6 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon vanilla essence
2/3 cup (160 ml) milk
2/3 cup (150 g) butter
4 oz (120 g) semisweet chocolate chips (optional)


Method

  1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C).
  2. Grease 6 extra large muffin tins or cups (paper muffin bake cups are recommended) or 12-15 medium cups.
  3. Beat the eggs with sugar, mix with flour, cocoa powder, baking powder, vanilla and milk.
  4. Fold in the melted butter.
  5. Add chocolate chips; coat them with flour before mixing into the batter.
  6. Bake at 350 degrees until a until a wooden pick inserted in center comes out clean, about 30 minutes for XL muffins, about 20 minutes for medium size muffins.
The Chocolate Muffins may be served hot or at room temperature.

lemon-pie

INGREDIENTS (One pie)

          PIE CRUST
     200 ml    wheat flour
     100 g     butter
     30 ml     water
          FILLING
     1         lemon
     60 g      butter
     1         egg
     150 ml    sugar
PROCEDURE
  Preheat the oven to 225 deg. C.
(2)  Make crust: Mix flour and butter in a food procesor.  Add water and form a dough. Press into a pie pan.
(3)  Make filling: Grate  the  lemon  peel.  Press  the
juice out of the lemon.
(4)  Melt the butter.
(5)  Beat the egg with sugar, the melted butter,  lemon
 juice and lemon peel.
(6)  Pour the filling into the pie crust.
(7)  Bake in oven for about 30 minutes at   225 deg. C.
(8)  Let the pie cool down.

APPLE PIE RECIPE

CRUST (recipe makes one double crust):

2 1/2 cups white flour
2 tbsp. sugar
1/4 tsp. salt
1/2 cup cold butter, broken into small pieces
5 tbsp. cold vegetable shortening
8 tbsp. ice water


  • Measure the flour, sugar and salt togetherl.  Stir to combine.

  • Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife.  Don't over mix them.

  • Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).

  • Turn the dough onto a lightly floured surface, knead it together, then divide in half.  

  • Flatten each half into a disk, wrap in saran wrap and chill for at least half an hour.

  • Roll out one of the disks on a lightly floured surface until you have a circle that's about 12 inches in diameter.

  • Put the circle in a 9" pie plate, trimming any extra dough from the edges with a sharp knife (parents only). Return it to the refrigerator until you are ready to make the pie.

  • Add filling (see below)

  • Roll out the second ball of dough and cover top.  Use a fork or your fingers to pinch the edges together.  cut a couple slits in the top.



  • FILLING

    1/3 to 2/3 cup sugar
    1/4 cup all-purpose flour
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground cinnamon
    Pinch of salt
    8 medium sized apples (a medium apple = about 1 cup)
    2 tablespoons margarine
    • Heat oven to 425 degrees.
    • Peel, core and slice the apples.  Try to keep the size of the slices even.
    • Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl.
    • Stir in apples.
    • Pour into pastry-lined pie plate.
    • Dot with margarine.
    • Cover with top crust and seal the edges. Cut slits in the top. 
    • OPTIONAL:  Cover edge with 3-inch strip of aluminum foil to prevent too much browning.
      • Remove foil during last 15 minutes of baking.
    • Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.

    Chocolate Chip Cookie Recipe

    Chocolate Chip Cookie Ingredients

    • 3/4 cup sugar
    • 3/4 cup packed brown sugar
    • 1 cup butter, softened
    • 2 large eggs,beaten
    • 1 teaspoon vanilla extract
    • 2 1/4 cups all-purpose flour
    • 1 teaspoon baking soda
    • 3/4 teaspoon salt
    • 2 cups semisweet chocolate chips
    • if desired, 1 cup chopped pecans, or chopped walnuts



    Chocolate Chip Cookie Recipe Directions


    Preheat oven to 375 degrees.  Mix sugar, brown sugar, butter, vanilla and eggs in a large bowl by hand.  Stir in flour, baking soda, and salt.  The dough will be very stiff. 
    You can even use a Kitchen Aid mixer for this first step.  I use the batter attachment and mix on a lower setting.  Just be sure that the dough is well mixed before moving on.
    Stir in chocolate chips by hand.  You'll need to use a sturdy wooden spoon for this and a bit of muscle.  You can add the pecans, or other nuts, at this time if desired.  Keep stirring and folding the chocolate chips and nuts into the dough until they are evenly dispersed.  (This makes sure you have enough chocolate in each cookie!!)

    Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet.  The chocolate chip cookies need to be this far apart because the dough spreads during cooking.  No one wants to cut the cookies apart after baking.

    Bake 8 to 10 minutes or until light brown.  You may even think that the chocolate chip cookies are underdone, but they will finish cooking through out of the oven.  If you leave them in too long, the cookies will be tough or crispy.  (My kids eat them anyway.  I always over cook at least one sheet because of the phone, a child wanting some attention or some other reason)

    The centers will be soft.  Let cool completely then remove from cookie sheet.  I use a flat spatula to remove the cookies from the sheet.  It helps to get them off quickly.  If you try to remove the cookies while they are still warm, the chocolate chips are still very soft and this can cause a very big mess as well as messy looking cookies.

    Brownie Recipe

    Brownie Ingredients

       This recipe calls for:
    6 Tablespoons Unsweetened Cocoa
    1/4 Cup Butter
    1 Cup Sugar
    1/2 Teaspoon Vanilla
    1/4 Teaspoon Salt
    1/3 Cup Flour
    2 Eggs
    1 Cup Toasted Pecans

    Brownie Equipment

                                   For this recipe you will need:
     
    8x8 Baking Pan
    Measuring Cups
    Measuring Spoons
    Spatula
    Mixing Spoon
    Crisco (Vegetable Fat)

    First Step: Melting and Mixing


    First, in a microwavable dish, melt the 1/4 cup of butter (make sure that the butter is completely melted, otherwise it will not mix in with the other ingredients, and you will have to start over). Then stir this into the 6 Tablespoons of Unsweetened Cocoa.

    Second Step: Mixing Brownie Batter


    Now, combined with the butter and cocoa--mix in thoroughly:
    I Cup Sugar
    2 Eggs
    1/2 Teaspoon Vanilla Extract
    1/3 Cup Flour
    1/4 Teaspoon Salt

    Third Step: Brownie Batter


    This is how your final batter should look. If you would like to add pecans to your batter, do it now.
    Now, pre-heat oven to 325F degrees.

    Fourth Step: Flouring The Brownie Pan


    You will need to flour the baking pan. First, cover the glass dish with Crisco (vegetable fat) or butter. Then, put a few tablespoons of flour or cocoa in the dish, and shake it until the sides and bottom are covered. This will keep the brownies from sticking to the dish.


                              Fifth Step: Pouring Brownie Batter
     
    Pour the brownie batter into the dish.

    Ricas recetas.

    Hola chicas y chicos, bueno les cuento que hoy en adelante aprenderemos a cocinar juntos esquisitas recetas, pero la diferencia será que todas las recetas serán en inglés así todos de una entretenida manera aprenderemos como cocinar y una segunda lengua a la vez.

    Blueberry Muffin recipe

                                     Ingredients list:

    2 cups of blueberries.
    2 eggs.
    2 cups of flour.
    1 cup of sugar.
    1/2 cup of milk.
    1/4 cup of butter.
    2 teaspoon of baking powder.
    1 teaspoon of vanilla.
    1/2 teaspoon of salt.

    Instructions:


    Preheat your oven to 350F.

    Grease and floor muffin pan. Beat together the butter, eggs, salt and sugar.

    Mix the flour with baking powder and sift into first mixture, alternating with milk.

    Blend in the vanilla.

    Add the blueberries.

    Pour into the muffin pan and bake for about thirty minutes.
